Questions about
Last Catch 2016
Everything you need to know before placing your order.
Is it safe after 10 years?
Yes. The “best before” date is a legal requirement from 2016 – not the actual shelf life of the product.
Commercial sterilization at 120°C creates a shelf-stable product when the can remains sealed and undamaged.
The can becomes a hermetically sealed environment – stable as long as it remains physically intact.
This is well-established science. In 1851, a 38-year-old Appert can was opened at the London World Exhibition. The contents were reported as still edible.
We have opened and tasted multiple cans from the 2016 batch. The quality remains remarkably intact.
The process of canned fish preservation allows products like this to safely age over time.
How should I eat it?
You can eat it directly from the can or use it in simple recipes.
The classic approach: open, drain, add a few drops of lemon juice and some fresh chives. Nothing more is needed.
For a more refined experience, serve it with a glass of dry Riesling or Grüner Veltliner — the acidity complements the mild smokiness beautifully.

How should I store it?
Store in a cool, dry place, away from direct sunlight. No refrigeration needed while sealed.
Store it as you would store a bottle of wine — temperature stability matters more than cold.
Once opened, transfer to a sealed container and refrigerate. Consume within 2–3 days.
