Safety & Shelf Life
Is it safe after 10 years?

Yes. The “best before” date is a legal requirement from 2016 – not the actual shelf life of the product.

Commercial sterilization at 120°C creates a shelf-stable product when the can remains sealed and undamaged.

The can becomes a hermetically sealed environment – stable as long as it remains physically intact.

This is well-established science. In 1851, a 38-year-old Appert can was opened at the London World Exhibition. The contents were reported as still edible.

The process of canned fish preservation allows products like this to safely age over time.

Last Catch 2016 comes from a closed production – the technology, the machines and this particular vintage cannot be reproduced.

Only 6,000 cans remain from an original run of 10,000. Each can is a physical artifact from a moment in time that is now over.

How should I store multiple cans?

Store them as you would store bottles of wine – in a cool, dry place, away from direct sunlight and temperature fluctuations.
