Last Catch 2016 FAQ
Questions & Answers
Everything you need to know before placing your order.
Last Catch 2016 is a 10-year-aged canned trout from Serbia — a fully sterilized product that remains stable when properly stored and unopened. This FAQ answers the most important questions about safety, storage, taste, ordering, and delivery.
Is it safe to eat after 10 years?
Yes. Last Catch 2016 was fully sterilized, and the “best before” date is a legal requirement from 2016 — not the actual shelf life of the product.
Complete thermal sterilization at 120°C eliminates microorganisms and creates the preservation basis behind River Fish technology.
The can becomes a hermetically sealed environment — stable as long as it remains physically intact.
This is well-established science. In 1851, a 38-year-old Appert can was opened at the London World Exhibition. The contents were still perfectly edible.
We have opened and tasted multiple cans from the 2016 batch. The quality remains remarkably intact.
The process of canned fish preservation allows products like this to remain stable over time when properly stored and unopened.
How should I store the product?
Store it as you would store a bottle of wine — in a cool, dry place, away from direct sunlight.
No refrigeration required while sealed.
Once opened, transfer to a sealed container and refrigerate. Consume within 2–3 days.
What does it taste like?
Last Catch 2016 has a lightly smoked, mild and clean taste.
The texture is tender. The bones are fully edible. The flavor is deeper and more complex than any freshly produced canned fish.
Comparable to the difference between a young wine and a mature Bordeaux.
Three ingredients: trout, sunflower oil, sea salt. Nothing else competes.
Is this food — or a collectible?
Both.
Last Catch 2016 is a fully edible, premium food product — meant to be opened and enjoyed, ideally with a glass of white wine.
It is also a genuine millésime artifact: a limited vintage from a technology that no longer exists. A series that can never be reproduced. Learn more on the Last Catch 2016 shop.
Some buyers order one to eat, and one to keep. Either is a perfectly valid choice.
